02: Burrata & flat peach salad
The simplest most sexy summer salad.. to see off the last of this beautiful weather in Sydney, try it, you wont regret it.
Burrata is an Italian cows milk cheese made from mozzarella it has a firm outer casing while the middle is an amazing creamy and soft texture, half the fun is cutting it open on the table to serve and watching all the beautiful creamy middle spill out over your salad.
Eat it alone or with friends, this is one of my most favourite and indulgent ingredients. Once a rare find you can now buy it at most supermarkets in Australia and of course the fancy imported Italian brands in good specialty food stores.
The first time I ever used burrata was a while ago in New York, I was a private chef for a well know actor and I just fell in love with it. The texture, the look, the creaminess, pure luxury. So very versatile and can stand on its own, as the hero of your dish, simply add some amazing olive oil, some sweet balsamic or sherry vinegar and in this case some juicy ripe, end of season flat peaches, torn over the platter so the juice adds to the depth of flavours. Burrata and Flat peach salad
1 whole burrata
2 ripe flat peaches, torn, seed discarded
Handful of raddicio leaf, white core removed
8 ripe cherry tomatoes, halved
Handful fresh basil leaves, torn
Good quality balsamic vinegar
Good quality extra virgin olive oil
Salt and pepper
Simply scatter the raddicio, then tomato, then basil onto a serving platter.
Add the ball of burrata and tear the peaches over the salad. To dress salad drizzle about 1 tablespoon of olive oil and the same amount of balsamic over salad. Season with salt and pepper.
To serve, place on table with guests or alone and cut the ball of burrata with a knife, consume salad.
