Hello! I want to share this with you because this quick snack has been on high rotation, when I post this to my insta stories I get alot of feedback, so I thought id pop it up here.
I gotta say, my diet of late could use some structure, like the rest of my life but alas its generally decided upon through desperation to fill my stomach just enough to keep me powering through the rest of my day. Hence this fun, slightly nourishing, taco came about. It’s all fridge based, what I mean is you just open the fridge and let it unfold in all its quick, simple, mood based form. I grab out my favourite hot sauce, the eggs, bacon or prosciutto if i’m lucky and anything else that will add a dash of protein to fill the void and carry on!

Note: the ‘tacos’ i use are from the Hengfa grocery at Dee Why, Sydney. They are hand rolled duck pancakes in the freezer section, but any soft taco works.
2 soft tortillas
1 rasher bacon
2 eggs, gently scrambled
Hot sauce, I love truffle hot sauces but have a huge collection of many flavours..
1/4 avocado
Fresh fine dice jalapeño, 1/4 only
Slices Manchengo cheese, or other tasty cheese
Heat medium cast iron pan, or any frypan really to medium heat.
In a dry pan, gently toast your tortillas, set aside.
Make sure pan is hot, add your bacon and fry until crispy, set aside.
Turn down heat and add eggs to the left over bacon fat. With your fork stir egg around pan until just cooked. Add salt & pepper.
Remove from heat and with the base tortilla on the plate, add the egg, cheese, jalapeño, avocado, bacon and hot sauce, top with remaining tortilla and enjoy!
