Perfect Chicken soup
Im sure you have seen a few chicken soups, but this one is worth the effort..
I aim to share with you some beautiful, easy, sometimes not so easy, healthy, chic & wholesome food that will enlighten and nourish! Its a lifestyle that comes second nature once you get in your groove and makes you shine form the inside out..substack/ sharing food thoughts, is something I have spoken about doing for so long now and thought what better way to contribute than with a simple nourishing chicken soup. This soup was shown to me by one of my oldest & most inspiring clients, the first time I ever entered her home to do a trial as a private chef, on a chilly winter evening in June, with the fire crackling and the champange on ice she gently walked me thorugh this healing recipe, I have made it a million times since!
I love to have recipes like this, that you know off the top of your head, it doesnt need to be perfect every time but if you cook and taste you can adjust and flavour to your needs. This soup is so good it can heal any cold and strengthen any immune system, you could literally save your life with just this soup! Then pass it on to the next generation..

Chicken Soup (to warm the soul)
Part 1
1 whole chicken, washed and dryed
2 carrots, chopped
3 large sticks celery, chopped
handful thyme, gently torn
1/2 onion, roughly chopped
small amount chopped fennel
torn parsely leaves
2 bruised slices peeled ginger
Wash & dry your chicken, add all of the above ingredeints, along with the chicken to a pot deep enough to then cover with cold water.
Bring to a boil then turn down to a simmer, lid adjar, simmer for 30mins, then turn off heat, cover with lid and let steep for 1 hour.
Remove chicken from pot when slightly cooled, de bone chicken, discard bones and skin, shred juicy meat and set aside. This is easier when chicken is warm but dont burn your fingers!
Drain the stock, discard old veges and set stock aside.
Part 2
2 small carrot, small dice
4 sticks celery, small dice
1/2 leek, finely diced and washed
3 large knob ginger, finely chopped
3 peices fresh turmeric, fine chop
1 corn cob, de husk and roughly chop,
handful of thyme, leaves only, fine chop
Saute everything except corn on low, with a glug of extra virgin olive oil, sea salt and pepper, 10 mins
Then add stock, bring to boil and simmer for 15min, add corn and simmer for 1 more min. Season well, this killer broth loves a little salt..
Turn off heat, adjust seasoning and stir through chicken. Done!
The most nourishing soup, makes a huge batch to last the week!
